filling
10-12 medium apples, peeled and sliced into chunks
5 tsp lemon juice
3/4 cup coconut sugar
3/4 tsp cinnamon
1/4 tsp ginger
1/4 tsp sea salt
2 TBSP cornstarch
topping
3/4 cup coconut sugar
1/2 cup all purpose flour
1 cup old fashioned rolled oats
1/4 cup coconut oil melted
1 cup vegan butter melted
1 cup Kind brand cinnamon granola
pinch of clove
Cut apples into chunks and place in 9x13 inch baking pan. The baking pan should be 3/4 full of cut up apples.
Add the rest of the filling ingredients to baking pan (lemon juice, sugar, cinnamon, salt, and cornstarch) and toss with the apples util well combined.
In a separate bowl, combine all the ingredients for the topping. The topping should look like wet sand once it its mixed well.
Cover filling mixture with the topping mixture.
Bake at 375 degrees for 1 hour and 10 minutes, or until the apples are bubbly and the top starts to brown. The coconut sugar is naturally dark, so check to make sure that the apples are soft, and the topping is crispy.
Allow to cool for 15-20 minutes before serving.
Serve alone or with your favorite vegan vanilla bean ice cream!!
