INGREDIENTS:
1 red beet, peeled and cubed
1 golden beet, peeled and cubed
1 small sweet potato, peeled and cubed
2 small red potatoes, cubed
1/2 tsp favorite salt less all purpose seasoning
Olive oil
1-1/2 C veggie broth
Pinch of red pepper flakes
Chopped fresh cilantro
Chopped fresh basil
Make sure you have organic ingredients!!!! Wash and chop the red potatoes and set aside. After you cube the red potatoes, put them in a separate skillet. They bleed into the rest of the dish, and turn everything red.
Place cubed sweet potato in separate skillet and turn skillet on medium high heat. Add broth and oil, and sauté for 10-12 minutes. Then turn on red beets skillet to medium high heat AND add golden beets and red potatoes to sweet potato skillet. Add more veggie broth as needed to steam the beets and potatoes in both skillets. Occasionally add olive oil. You want it to be more steamed than greasy. Add all purpose seasoning and red chili pepper flakes. Sauté until potatoes are golden brown.
Plate with all of the veggies. Add fresh cilantro and basil. Enjoy!
