4 baked sweet potatoes, skins on
2 TBSP maple syrup
1 tsp pumpkin pie spice
1 tsp vanilla extract
3/4 cup almond milk unsweetened
1 1/2 cup coconut yogurt
1 vanilla bean
1 1/2 tsp stevia, or favorite plant based sweetener
Chai Granola
4 cups of old fashioned rolled oats
1 cup pecans
1/2 cup pumpkin seeds
1/2 tsp salt
3 TBSP coconut oil melted
1/2 cup maple syrup
2 TBSP nut butter (optional)
chopped dates (optional)
chai spice
2 tsp chai spice blend (see below)
(2 TBSP ginger powder)
(2 TBSP ground cardamom)
(1 tsp grated nutmeg)
(1 1/2 tsp ground cloves)
(3 TBSP ground cinnamon)
(a pinch of fresh ground black pepper)
Mix together all of the spices for the chai spice, and set aside. This can be used later in oatmeal with raisins, tea, of even a iced coffee drink!
Preheat oven to 350 degrees and line a baking sheet with parchment paper.
In a big bowl, mix together the oats and pumpkin seeds
Mix together the chai spice mix and slat and add to the dry ingredients. Combine
until well incorporated.
Add the maple syrup, coconut oil, and nut butter to the dry ingredients and combine.
Evenly distribute on baking sheet and bake in the oven for about 18 minutes. KEEP
YOUR EYE ON THIS. Check the granola, and stir it every 4-5 minutes to keep it from burning. Stir more often towards the end of the cooking time. Bake until slightly brown. Once toasted, remove from oven, allow to cool and then place into a resealable baggie with the pecans and the dates for future use.
If you are in a pinch, you can also use your favorite organic granola, and skip these steps.
Meanwhile, in a food processor add sweet potatoes, maple syrup, almond milk, and pumpkin pie spice. Puree until completely smooth, about 4-5 minutes. Set aside.
For yogurt, take the vanilla bean, and soak it in a bowl of hot water. Use a filleting knife and cut the bean lengthwise down the middle. Scrape out the beans, place in a bowl. In that bowl, combine the yogurt and the stevia together with the beans.
Next, in a small mason jar put a layer of the granola, filled by a layer of the puree, then a layer of granola, and then a layer of yogurt-repeat until the jar is full. Seal and place into the fridge until ready to eat. Kills that sweet tooth in a healthy way.
It seems like a lot of work, but its actually very easy. Just a lot of little steps.
